Baked Bubble & Squeak Cakes

Turning your leftovers into something new never tasted so good. This is when you have any left over veggies, mash or potatoes and then turn them into these fluffy delicious cakes.

What you will need:

Any leftover veggies:

Roast potatoes / Mashed potatoes / Roast veggies like carrots, parsnips, butternut squash, leeks, courgette/ onions / cabbage chopped up / any crispy herbs or whole roast cloves of garlic from the roasting trays

Olive oil

Any extra herbs / chilli flakes


Let's cook

1. Pre-heat the oven to 180c/ 350f/ gas mark 4. 2. Roughly mash your veggies in a bowl or dish until your veggies are a big jumble that look like a rough and lumpy mash. You can even go in with clean hands if easier.

3. Divide the mixture into portions to form a cake shapes with your hands. Up to you on size, you can have more smaller ones or less large depending how many you are making them for. 5. Lay the cakes on a lined baking tray or dish and let them bake for approx 20 minutes until golden with some crispy edges.

Serve the cakes however you like - on toast, on top a crunchy salad or just as they are with dollop of your favourite, sauce, mayonnaise or mustard.
