Bubble & Squeak Bake

Who doesn't love a good bubble and squeak? With a crunchy cheesy topping, it's totally delicious and brilliant for using up any leftovers!

The ingredients for the bubble is all down to you and what you have left over.
For this one I used leftover:
Potatoes
Cauliflower
Sweet potato
Broccoli
Cabbage
Some breadcrumbs - I blitz up leftover bread and keep a stash of breadcrumbs in the freezer.
Cheese of choice - I used Kinda co Italian style
A tbsp of olive oil
Salt and pepper
Lets cook::
1. Pre-heat the oven to 180c/
2. Pop all your leftover veggies into a pan or bowl and mash them altogether.
3. Warm some olive oil over a medium to low heat in a large frying pan and spoon in the mixture. Allow to gently cook until the bottom becomes golden turning occasionally so not to burn - don’t rush this, allow the veggie mixture to go a lovely golden colour.... this brings out the taste!
5.Transfer the bubble mix to a heat proof serving dish.
6. Scatter the top with your fave cheese and breadcrumbs (or both!) and pop in the oven to bake for about 20 minutes until golden and and crunchy on top.
