Cheesy Cauli & Broccoli Bake
Roasted veggies with a creamy cashew sauce, topped with a generous handful of cheese and breadcrumbs cooked until bubbling, golden and delish!
Pop straight to the table with some crusty bread, crunchy salad or as a side dish to a Sunday roast!

What You'll Need:
1 cauliflower outer leaves removed and broken into pieces
1 handful broccoli or ( a leek or a handful of greens) roughly chopped
2 cloves of garlic, peeled and grated or finely chopped
1 x tbsp of mixed/ woody herbs (thyme, rosemary)
1 generous handful of cheese for topping on your veggies
A few bay leaves - optional
A handful of breadcrumbs
Olive oil
Freshly ground pepper
Sea salt
For the sauce
1 cup of plant based milk
2 tbsp of soft cheese - I used plant based Philadelphia.
1 cup of cashews
Juice of half a lemon
Salt & pepper
Let's Cook
1. Preheat the oven to 180°C gas 4.
2. Pop your cauliflower, broccoli ( or any other green veggies) into your roasting dish or oven proof pan. You can use the outer leaves of the cauli too, give them a good wash and roughly chop. Drizzle the veggies with a little olive oil, cover and pop into the oven for them to gently cook for about 15/20 mins.
4. Whilst the veggies are in the oven, let's make the sauce.
5. In a small blender add you cashews, half your milk, lemon juice, your cream cheese, salt and pepper.
6. Blitz until smooth. Add more milk if needed. You want the sauce to be thick and pourable. Have a taste.
7. Get your veggies out of the oven and pour over the cheezy sauce.
8. Top with your breadcrumbs, a big handful of grated cheese and a drizzle of of olive oil
9. Bake for about 15 mintutes with a lid on and then take off for the last 10 minutes or until golden, bubbling and cooked through!
Serve & enjoy!
You can add other tasty ingredients to your bake like mustard, some chilli flakes & seeds - Make this your own.
