Chickpea Choona

Whether you're stuffing it into a baked spud, scooping it up with crackers or piling into sarnie - this Chickpea 'Toona' mix hits the spot!

Chickpeas are great for soaking up flavour and we've turned the volume up on the tasty ingredients to make this a delicious filling everyone will love!

What you will need:

1 jar of cooked chickpeas drained and rinsed

1 small red onion, peeled and finely diced or grated

1 lemon

8-10 cornichons (pickles) chopped into tiny pieces

Plant-based mayo

Sea salt

Freshly ground black pepper


Let's make it:

1.Pop your chickpeas into a mixing bowl and with a potato masher or a fork, crush all the chickpeas to create a 'flakey' texture.

2. Add the red onion and cornichons to the bowl.

3. Zest the lemon (avoiding the white pith which is bitter) into the bowl with the other ingredients. Cut the lemon in half and squeeze in the juice, catching any pips with your other hand.

4. Add 2 heaped tablespoons of plant based mayo, a good pinch of salt and freshly ground black pepper to your taste and mix everything together really well. Have a taste to check you like the seasoning and serve!

If you don't use the whole batch at once, keep in the fridge and use within 2 days.
