Creamy Whipped Tofu with Spicy Balsamic Tomatoes
Breakfast, lunch or dinner this is seriously good. The deliciously creamy tofu doesn't even taste like tofu... and it doesn’t need any cooking! Just whip up the ingredients until smooth!
I’ve used firm tofu for this one but if you want it super silky smooth just swap for silken tofu.

What you will need:
1 pack of tofu - I used firm
1 tbsp of nutritional yeast (this is optional)
1 garlic clove - peeled
1 lemon - juice and zest
Salt and pepper
A few tbsp of olive oil - tweak this if needed.
A piece of your favourite toast - make it a good one
A handful of tomatoes roughly chopped in large chunks
A few chilli flakes
A splash of balsamic vinegar
Lets Cook:
Add the tofu, garlic, lemon zest and juice, nutritional yeast, olive oil, salt & pepper to a food processor or nutri-bullet.
Blitz until smooth.
Have taste and tweak if needed with more lemon and olive oil if you want it smoother.
Pop a pan on a medium heat with a drizzle of olive oil.
Add your sliced tomatoes and let start to sizzle.
Sprinkle in a few chilli flakes, salt & pepper.
Add a splash of balsamic vinegar.
Spread a generous amount of whipped tofu onto your toasted bread.
Top with your now gooey tomatoes
Finish with a drizzle of olive oil or balsamic vineger.
The whipped tofu is delicious used as a dip, in a sarnie, dolloped on a baked potato.. Take it to the next level by adding your fave herbs and spices!
