Gorgeous Green Fridge Raid Soup
This is super simple way of getting in the fridge and using up any rogue and random bits and bobs - from the last onion, garlic, any green veggies or herbs.
With some love and then blitzed together this gives you a delicious bowl of goodness - at the same time reducing your food waste AND saving you money!

What I used from my fridge:
1 x onion, peeled
A few cloves of garlic, peeled
1x leek
1 stick of celery
1 potato
1 x courgette
A handful of brocolli
A handful of spinach
1 tin of cooked lentils, drained
Veg stock
2 tsp dried herbs - I used thyme
Splash of Tamari soy sauce
Salt & pepper
Olive oil
A spoonful of yoghurt for topping - optional
Lets cook:
Start by getting all your veggies ready. Wash and roughly chop them. Everything will be blitzed up making this super easy to prepare.
In a large pan add a drizzle of olive oil, followed by your onions, garlic, leeks and celery.
On a medium heat, let this gently cook for a few minutes.
In goes the rest of your veg.
Stir everything together.
In goes the lentils, stir these in with your veg.
Add your herbs, a good pinch of salt and pepper, a splash of Tamari (soy sauce) and your veg stock.
Your veg stock should just cover the veggies.
Pop on a lid and this gently simmer until the veggies are cooked through. This will be about 10/15 minutes.
When the veggies are cooked. Take off the heat and let cool slightly before blitzing.
I use a hand blender as it is so much easier and less washing up. You can of course use a free standing blender. Be mindful using either as the soup is hot.
Blitz until super smooth.
Have a taste, tweak if needed.
Serve warm with a drizzle of yoghurt, olive oil, spices, seeds, a handful of cheese... the choice is yours
