Harissa Butterbeans
These spicy butterbeans are so simple and seriously delicious. Taking only minutes to throw together, these beans make a great breakfast, brunch, lunch or dinner.
Butterbeans are packed with protein and fibre, a brilliant budget friendly store cupboard ingredient to have at home.

What you will need: Serves approx 4
1 x Onion (red, white or a large shallot) peeled & finely chopped
3 x Garlic cloves, peeled & chopped or grated
2 x 400g tins of butterbeans drained
1 x tin of chopped tomatoes (or passata)
2 tbsp of harissa paste (reduce this for less heat/ spice)
A few sun-dried tomatoes roughly chopped (or a good squeeze of tomato puree)
Olive oil
Salt & pepper
Let's cook
Pop a pan on a medium heat with a good drizzle of olive oil
Add your onions & garlic and let soften for a few minutes.
In goes you Harissa paste & chopped sun-dried tomatoes. Give this a stir.
Add your butterbeans and stir everything together.
Pour in the tinned tomatoes and give a little season.
Let this come to a simmer and allow this to gently bubble for 10 minutes until the sauce is reduced slightly and it looks gooey and jammy.
Have a taste - remove from the heat.
Serve just as it is, or top on toast, pile into a baked potato, stir in a few handfuls of spinach... the options are endless.
