Love Your Leftover Sandwich
I think one of the best sandwiches is one you pile up using the delicious leftovers from your Christmas Feast or Sunday roast!

What you will need:
3 slices of bread, MAKE IT A GOOD ONE.
Leftover roast potatoes, sliced
Any roasted onions or shallots
Some leftover cabbage
A handful of leaves
1-2 spoonfuls of leftover red cabbage
1-2 tomatoes, slices
Mayo of your choice - plain or spiked with other funky flavours
Mustard of your choice - Dijon, English or Wholegrain
Salt and pepper
Olive oil
Let's pile it up:
1. Place a frying pan on a medium heat and drizzle in some olive oil. Lay in the slices of potato and let them fry for 2/3 minutes or until they have turned crispy and golden brown. ( You can of course add your potatoes in cold, just give them a squash)
2. Lightly toast the bread - we are ready to pile up your sarnie.
3. On one slice of bread, spread a layer of mustard, scatter over some salad leaves and sprinkle over some pepper. Evenly lay in the potatoes then top with the second slice of bread.
4. Smother the second layer of bread with a generous dollop of mayo then lay in the slices of tomato followed by a scatter of red cabbage.
5. Drizzle over a little olive oil and top with the third slice of bread.
6. Gently press down on your magnificent sandwich, cut in half, serve and tuck in!
