Nutty-Not too sweet Granola

We’re talking crunchy, nutty, and the best bit... not too sweet. I love this served with fresh fruit, a dollop of thick yoghurt topped with hemp seeds.

What you will need:
Below is a guide - I don't measure out ingredients so this can be super flexible. Use what you have, it will taste delicious.
6 cups of oats - use your favourite
1/2 cup coconut flakes ( you can toast these)
1 cup pecans
1 cup walnuts
1/2 cup sunflower seeds
1/2 cup pumpkin seeds
2 tbsp maple syrup
3 tbsp cup coconut oil - melted
2 tbsp of your favourite peanut butter
2 tbsp of tahini
2 tsp of cinnamon
Let's cook:
Pre- heat the oven to 140 c - you don't want it to burn so keep this low.
Add the nuts, seeds, cinnamon and oats into a bowl and mix.
Melt your coconut oil and mix this together with your tahini, maple syrup and peanut butter.
Pour the wet mixture into the bolw with your nuts etc.
Give this a good mix until all the oats and nuts are covered.
Lay this out onto a lined baking tray and bake for approximately 45 mins or until it's a lovely deep golden colour... it will now smell amazing!
Half way through give it a mix and keep an eye it does burn.
When its done, remove from the oven and let it cool. Mix in your coconut flakes and store in an air tight container or glass jar.
You now have your own homemade granola any time you need... and the best bit is you know exactly whats in it - ENJOY!
You can go in and pimp this up with more of your favourites Extra dried fruits - Jumbo raisins, chopped dates, flax seeds, chai seeds... make this your own.
