One Pan Brunch Shakshuka
This is favourite in our house. A one pan recipe with peppers, tomato & creamy garlicky tofu tucked in - cooked with fragrant spices makes this a simple, delicious & comforting weekend breakfast/ brunch.
Other veggies that you could use are courgette, chopped potatoes & aubergine. I also love using a little harissa paste if I have any for that extra kick...!

What you will need:
1 x onion finely sliced
3 cloves garlic crushed or chopped
2 peppers thinly sliced
1 x tin chopped tomatoes
1 tsp paprika
1 tsp ground cumin
A handful of spinach (or frozen)
A squeeze tomato puree (or a few sun-dried tomatoes chopped)
A handful of fresh coriander - optional but really good.
Salt & pepper
Olive oil
Tofu mix
1/2 block of firm tofu
1/2 cup of milk (I use dairy free)
1 garlic clove
Pinch of salt and pepper
1 tbsp of nutritional yeast or hard cheese of choice.
Lets Cook:
Pop a shallow pan on a medium heat and add a drizzle olive oil.
Add your onion, garlic & peppers and let them soften for a few minutes.
In goes the spices - stir these through.
Tip in the tinned tomatoes, tomato puree (or sun-dried) a pinch of salt & pepper.
Stir altogether, pop on a lid and let cook on low for 10 minutes until it goes a lovely dark red colour and gorgeous smell.
Whilst this is cooking let's make the tofu.
Put all your ingredients into a small blender or nutri-bullet and blitz.
Stir in your chopped or frozen spinach to your pan of veggies.
Add 4 spoons of your tofu mix into the pan in largish blobs.
Pop this into the oven or under the grill for a few minutes to cook through.
Its ready!
Serve straight to the table with some fresh coriander… and some crunchy toast!
