One Pan Orzo Pasta

This delicious one pan meal can be on the table in under 30 minutes.
Packed full of goodness, it's a great midweek winner.
Make this your own and change it up to what you have.
Spinach, broccoli, chopped mushrooms, butterbeans, capers, olives, nuts are all great to add - Creating texture, flavour and packing in the plant goodness.

What you will need:
Orzo pasta approx 400g
1 x tin chickpeas drained & rinsed
3 garlic cloves chopped or grated
A shallot/ Red onion finely chopped
Approx 8 sun-dried tomatoes roughly chopped
2 handfuls of greens (I used kale) washed and shredded *
1 good quality veg stock cube in 1 1/2 litres water
Olive oil
Salt & pepper
Let's Get Cooking
Grab a largish shallow pan and pop on a medium heat.
Add good drizzle (about 1tbsp) of olive oil along with your garlic & shallot.
Let these cook and soften for a few minutes.
Now add your herbs, chickpeas, tomatoes & a good pinch of salt & pepper. Gently mix together
In goes the kale & gently stir this into your veggies.
Add the zest of your lemon and stir in.
Sprinkle over your orzo pasta evenly in the pan. Nestle it in amongst your delicious veggies.
Pour in your veg stock, adding more water if needed (so it just covers the pasta)
Gently stir together.
Turn the heat down low.
Pop on a lid and let it do its thing for about 8-10 minutes. Until the pasta is just cooked but still firm.
Squeeze in the juice of your lemon - gently stir this in.
This is ready to serve straight to the table.
Delicious with an extra drizzle of chilli oil if you like an extra kick or a generous scattering of cheese.
