Peri Peri Tofu Caesar Salad
This Caesar salad recipe came together when I was raiding the fridge as we are moving house - but it turned out soooo good I had to share with you.
Fresh crunchy wedges of lettuce, peri peri tofu, scattered with crunchy homemade croutons and a full on punchy garlic & mustard dressing - I hope you enjoy this as much as we did.

What you will need:
1 pack of firm tofu - cut or torn into chunky pieces
2 x small gem or 1 larger romaine lettuce washed and cut into wedges
Some leftover bread - crusty, rustic bread works best. Roughly torn into pieces
2 tsp of peri peri spice
1 tbsp of corn flour (optional) this helps the tofu go crispy
For the dressing
1 x garlic clove
Juice of 1 lemon
2 tbsp of olive oil
2 tbsp of plant based mayo OR a tin of white beans drained
2 tsp of wholegrain mustard
Pinch of salt and pepper
Let's cook
1. Pre-heat the oven to 180c / 340f / gas mark 4.
2. Tear up the bread into chunky pieces, scatter them on a baking tray, drizzle with a little olive oil, sprinkle over a pinch of salt and pepper then pop in the oven to bake for 10 minutes until crisp around the edges. Once they’re ready, remove from the oven and set aside to cool.
3. Wash your lettuce, dry with a tea towel and cut into chunky wedges.
4. In a bowl add the tofu pieces and sprinkle in the corn flour so its lightly coated. Add the peri peri spice, salt and pepper. Mix until the tofu is all covered.
5. Pop a large frying or griddle pan over a medium heat. Once the pan is warm, drizzle in the olive oil and then the tofu. Let this cook until golden and a little crispy.
6. While the tofu is cooking, make the dressing by mixing together the mayo, garlic, mustard, lemon juice, olive oil, a good pinch of sea salt and pepper. Have a little taste to check that you’re happy with the seasoning - it should taste full on punchy! If using white beans instead of mayo, pop into a small Nutri bullet to blitz up until smooth,
7. Once the tofu is cooked, turn off the heat.
8. Time to put your salad together. Arrange the lettuce wedges on large plate or serving board, scatter over your tofu and your crunchy croutons. Finish by pouring over all the punchy dressing,
Serve with an extra drizzle of olive oil and a squeeze of lemon and tuck in!
