Sexy Sweet Potatoes

If sweet potatoes weren't delicious enough!...try these with this fresh & delicious olive and herby topping.

What you will need:
1 large or 2 small sweet potatoes
A handful of olives.
A handful of fresh parsley (or coriander)
Half a fresh lemon
Olive oil
Salt and pepper
A few dried chilli flakes (optional)
Let's cook:
Pre heat your oven to medium
Keeping the skins on chop your sweet potatoes lenght-ways into chunky wedges
Pop on a lined baking dish or tray and raost in the oven for approximately 20/25 minutes until golden, gooey and cooked through.
Whilst the potatoes are cooking, make your herby topping.
Get your olives and herbs on to a board and chop altogether.
Add a drizzle of olive oil, squeeze of lemon and black pepper and keep chopping until you have a chunky paste.
Have a taste - it should be fresh and punchy !
Remove your sweet potatoes and transfer to your serving dish.
Drizzle over your herby topping, sprinkle with a few dried chillies and tuck in!
