Singapore Noodle Stir-fry

Your very own Singapore Noodles at home. This is bowl of delish noodles and fresh veggies with the flavour dial off the scale! Packed with chilli, garlic, ginger and curry powder!

This is your base - add whatever you wish... the veggie packed goodness is already there.

What you will need:

1 red onion, peeled and finely sliced

2 cloves of garlic, peeled and finely chopped

1 thumb sized piece of ginger, finely chopped

1 small cauliflower cut into strips about 2 / 3 handfuls

1 red chilli, finely sliced, seeds optional depending on how hot you like it!

1 x pepper, deseeded and sliced

250g of noodles (your choice) cooked according the instructions on the packet

1 tablespoon of curry powder

2 teaspoons of ground turmeric

2 tablespoons of Tamari Sauce

Olive oil

Let's cook:

Before you start cooking, get all your ingredients ready according to the list above.

Cook the noodles according the the instructions on the packet then rinse them under cold water to chill them down and set aside.

1. Place a large frying pan or wok over a medium heat. Drizzle in 2 tablespoons of olive oil and scatter in the onions, garlic and ginger. Mix everything together and fry, stirring regularly, for 15 minutes or until the onions have completely softened and caramelised.

2. Add the the Cauliflower, pepper and chillis and tumble them together with the onions and garlic. Carry on stir-frying the veggies for another 3 to 4 minutes.

3. Meanwhile, in a small bowl, mix together the curry powder, ground turmeric, Tamari Sauce and 2 tablespoons of water.

4. Add the noodles to the pan, followed by the sauce and fry for another couple of minutes until the noodles are hot, jumbling everything together regularly.

5. Serve in bowls with an extra dash of Tamari or a drizzle of toasted sesame oil to your taste and enjoy!
