Spaghetti With Broccoli & Olives

A simple spaghetti with just a few ingredients, but when they all come together....delicious!


What you will need:

2 large handfuls of broccoli (washed) purple sprouting, or tenderstem

3 garlic cloves grated or finely chopped.

A handful of olives roughly chopped

Dried spaghetti - enough of for 4 people

Hard cheese of choice - I used Kinda co Italian

Black pepper to season

Optional - chilli oil to serve.


Let's cook

1) Cook your pasta following instructions on back of pack.

2) Whilst this is cooking, let's get your veg ready.

3) Grab your broccoli - We want to use it all, leaves, stalk and the shoots.

4) Chop off the very ends of the stalks - these can be a bit tough, finely chop all the way until you reach the florets and leaves.

5) You can chop these chunkier leaving the florets intact.

6) Pop a pan on a medium heat, add your olive oil and let this warm. Add your garlic to cook for a minute or two.

7) Add your broccoli stalks and stir. Let them cook for a couple of minutes.

8) Once your pasta is cooked drain leaving some pasta water in the pan and set aside.

9) Now add the rest of the broccoli & stir well. This will only need a few minutes to cook. You want the veggies still to have little crunch.

10) Add your pasta to your pan of veggies, sprinkle in your olive's and good pinch of black pepper.

11) Have a taste before your seasoning as the olives are salty.

Pile into bowls with a generous sprinkle of cheese, a drizzle of chilli oil and enjoy.
