Sugarless Berry Scone

This is the simplest rustic tear 'n' share scone that I made without any added sugar. I think the blueberries add a lovely natural pop of sweetness! Other frozen berries like blackberries, raspberries work well too. Let me know what you think.



What you will need:

2 x cups Self raising flour 

1 x cup - Frozen blueberries (use them when they are still frozen)

1 to 1/2 tsp of baking powder 

1  x cup of non dairy milk 

2 x tbsp non dairy butter (I used Naturli block)

1 to 1/2 tsp of mixed spice (or cinnamon depending on how you like it)



Let's cook:
  1. Pre heat your oven to 180c gas mark 4

  2. In a large bowl, add in your butter, flour, baking powder & spices.

  3. With clean hands bring all this together until if feels like bread crumbs. 

  4. Add in half your milk and gently stir together. Add in the rest checking the consistency. If its too wet add a little more flour, or if too dry add a 1 to 2 tbsp of milk. 

  5. Tip in your blue berries and with your hands gently mix them together. 

  6. Pop your scone on to a floured, lined baking tray.

  7. Mould this into a rough scone shape. 

  8. With a knife score the top into 6 or 8. 

  9. This is ready for the oven. 

  10. Allow to cook for 20/30 minutes or until golden brown, cooked through with a firm bottom. 


When deliciously golden and cooked through remove from the oven to cool & tuck in!
