Zesty Quinoa Salad Bowl

Loaded with a jumble of crunchy veggies, amazing herby & citrusy flavours.This salad bowl is so easy to whip up - all round healthy and delicious.



What you will need:

2 x cups of cooked quinoa

1 x avocado, skin and stone removed, chopped into chunks

1 x lemon

1/2 x cucumber, diced

1 x red onion, finely chopped

A few olives, roughly chopped

A handful of tomatoes - roughly chopped

1 x pepper, deseeded and diced

A handful of fresh coriander, roughly chopped

Salt & pepper

Olive oil


Lets get cooking:
  1. Cook your quinoa following instructions on pack. Once cooked, drain and set aside.

  2. Get all of your chopped veggies and herbs and pop in a large bowl.

  3. To make the dressing, you will need a small bowl or cup.

  4. Add in 2 tbsp of olive oil, the juice of a lemon, a pinch of salt and pepper.

  5. Whisk together and have a taste - tweak if needed. It should taste super punchy, once in the salad it will be perfect.

  6. Add in the cooled quinoa to your bowl of veggies along with the dressing.

  7. Give this a good but gentle jumble together so the dressing, veggies and quinoa are all mixed together (be mindful not to mush this up whilst jumbling)

  8. Have a taste - serve up and enjoy.


This can be enjoyed as it is, piled into a sweet potato or serve with a delicious one pot - like my Ratatouille, Banging black beans, Veggie chilli
